- Introduction
Fats and oils are part of us; they feature in our food, our structure; they are vital to our life and we start consuming them in mother's milk; they provide reserves of energy during the active years and in old age fats are very necessary. What is not well understood by the majority of people is that there are many different fats and oils, each with its own make up and each having a role to play that is sometimes unique. - We have to choose the appropriate kind of oil or fat for the situation in which we find ourselves, and for nutrition, the difference between the various types of fats produced in nature are becoming better understood.
